The flagship fine dining restaurant in the ultra-funky Establishment Hotel has one of Sydney’s most elegant dining rooms. The original pressed iron ceiling and majestic columns add to the sense of grandeur. It is beautifully appointed with large comfortable chairs, double-clothed tables and plush carpets; executive chef Peter Doyle complements the ambience with a menu that is bound to impress.
Just like the clientele at the tables, the menu is embellished with attractive indulgences. Entrees include dishes such as the tranche of duck foie gras with spiced peach, Sauternes jelly and toasted brioche, and quail breast wrapped in prosciutto and vine leaves, served with grilled fig, Belgian endive and balsamic jus. Main courses feature steamed Murray cod fillet on sand crab, chives, cucumber and squid ink capellini, or for something a little more substantial try the juniper crusted saddle of venison served with a cauliflower puree, sautée of girolles and parsley. Beautiful imported cheeses grace the dessert menu, however if you are craving something sweet the nectarine and peach eau de vie soufflé with champagne sorbet is divine. The wine list is a worthy read, a tome that will make you appreciate the comfortable chair beneath you.

Establishment's fine dining restaurant with marble cocktail bar and plush sofa seating, this gorgeous space combines original cast iron columns and highly decorative pressed metal ceilings together with luxurious fabrics and walnut timber furniture.
Silk panelling lines the walls of the cocktail lounge and an oversized bird cage style iron wine store houses aged wines and is a decorative piece that divides the dining area from the cocktail lounge.
Floors are wide timber polished boards with an inlay of chocolate carpet in the dining and cocktail bar areas and walls are soft white. Well known in Sydney as a chef/restaurateur since 1980 Peter Doyle has been heralded as "a home-grown legend" and "an inspiration to the industry". The Private Dining Room accommodates up to 16 guests. Floor to ceiling windows, silk panelled walls and exquisite chandeliers give a feeling of elegance to this beautiful room. While the restaurant can accommodate up to 70 guests and the private dining room up to 16, Establishment also has the ability to accommodate groups from 40 to 400.
