Wilson’s is set within the natural beauty of the lush rainforest hinterland that surrounds one of Australia's most beautiful places, Byron Bay. While less than 15 minutes drive from the action at Byron, Peppers Casuarina is a secluded retreat where guests can indulge and enjoy the rejuvenating peace of the rainforest.
FOOD & BEVERAGE
Chef Matthew Jeffries has created a menu that has a Pacific rim feel - a fusion of Australian, European and Asian cuisine, using fresh local produce from the Byron Hinterland region and seafood from the bay, along with some wonderful native bush tucker from Casuarina Lodge's own gardens.
Wilson's guests will enjoy a special dining experience, reflective of Matthew’s passion for the freshest seafood, meat, game and organic fruit and vegetables supported with a balanced and refined wine list.Specialities of the house include oven roast crispy skin half duck, complemented with garden fresh steamed vegetables and an orange palm sugar syrup. Another favourite is Pacific Rim flavoured Seafood Curry of half mussels and white fish pieces, green prawns and calamari strips, wok cooked with a coconut and red samba sauce.Prior to joining Peppers, Matthew worked in a variety of roles including Executive Chef at Clarion Suites Gateway in Melbourne, Head Chef at the London HMC in Melbourne and in senior posts with The Windsor Hotel and Voyages.Wilson’s menus change daily and focus on quality local and seasonal produce. The dishes are elegant and inventive using classical methods with contemporary flavours and ingredients.
PEPERS CASUARINA LODGE
Tastefully decorated private lodges allow guests to relax and take in the beauty of the surroundings. In this intimate environment visitors can indulge themselves with a massage, relax by the pool, stroll through the surrounding rainforest and later enjoy the superb food and wine at the retreat's restaurant, Wilson's by the Creek.
Consisting of 12 suites and 6 freestanding lodges, Peppers Casuarina Lodge has a definitive eco-style with a tropical rainforest decor throughout. All rooms and lodges have private verandas or balconies looking over the tropical surrounds.
Peppers Casuarina Lodge Byron Hinterland offers a host of outdoor endeavours including the chance to spot the resident platypus in the creek running through the property, plant a rainforest tree, go for scenic rainforest walks or have a dip in the swimming pool and heated spa.
Functions
Offering boutique accommodation for up to 36 delegates in 17 deluxe cabins, this is the perfect corporate retreat for small, intimate events including executive board meetings, company conferences, teambuilding seminars and workshops. The main meeting room can cater for up to 30 delegates theatre style and for larger groups, Wilson's by the Creek restaurant caters for up to 50 delegates theatre style or 80 delegates banquet style.

Peppers Casuarina Lodge is the ideal venue for a romantic wedding reception in the Byron Bay Hinterland. Combining the peaceful ambience of our rainforest setting and gourmet cuisine, Wilsons by the Creek restaurant accommodates small, intimate parties for up to 110 guests.
The bride and groom-to-be can relax in the knowledge that our wedding co-ordinator has expertise in planning everything from a charming outdoor marriage ceremony, to music, a celebrant and photographer, even luxury accommodation packages for guests and the honeymoon couple.
